To Die For – Blueberry Muffins
I got my blueberry recipe from All Recipes. This recipe is so easy! The mix and topping takes less than 15 minutes to make. Just fill up the cups and pop them in the oven and forget about them until they are done!
Unfortunately I can’t make blueberry muffins too often because The Renaissance Man doesn’t love muffins and I can’t finish them on my own. Sunsella sent me some their Sunsella Little Gems – Silicone Baking Cups to test out so I thought that this recipe would be perfect! Breakfast is my favorite meal of the day. I love a good plate of sausage, hash browns and eggs but a sweet treat tastes good for breakfast also.
This recipe makes 8 large muffins
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup fresh blueberries
3/4 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon
Directions
- Preheat oven to 400 degrees F. There’s no need to grease these silicon muffin cups.
- Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder.
- Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.
- Mix this with flour mixture. Fold in blueberries.
- Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
- To make crumb topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
- Bake for 20 to 25 minutes in the preheated oven, or until done.
Let’s do this!
While the over is preheating, combine the flour, sugar, salt and baking powder. I increased the recipe from 1/2 cup of sugar to 3/4 cup of sugar because the original recipe wasn’t sweet enough for me!
Mix veggie oil, egg and the milk
Mix it all together!
Until it looks all yummy like this!

Now for the crumble topping – it’s a must! Sugar, flour, butter and cinnamon

Top the muffin cups!
Pop them in the oven and voila! These guys are rustic looking but so tasty! What’s greatest about the silicon baking cups is that the muffins pop easily out of the cups and most importantly they are super easy to clean!
